Asparagus and Mushroom Sauté Recipe

I have become quite the fan of vegetable stir-fry and sautées lately. They are both great for getting large quantities of veggies into the diet without much effort. Since mushrooms and asparagus are two of my favorite cooked vegetables, I thought I would share this quick, easy asparagus/mushroom sauté for all those veggie lovers out there.


Asparagus and Mushroom Sauté – The Ingredients

The Recipe

Here is what you will need:

3 tablespoons Extra-virgin olive oil

1.5 cups (about 15 spears) chopped asparagus

1.5 cups sliced mushrooms

3 tablespoons chopped cilantro

1/2 teaspoon salt

1/2 teaspoon ground pepper


1. Cut the asparagus on a diagonal into about 1 inch pieces. Chop the cilantro if you haven’t already.

2. Heat the olive oil on medium-high heat in a large skillet. Add in the mushrooms and stir occasionally until they are lightly browned, about 3-4 minutes.

3. Add in the asparagus pieces and stir occasionally for 4-5 minutes.

4. Throw in the salt, pepper, and cilantro, stir it around for about 30 seconds, and remove from heat.

5. Serve and enjoy!


This easy veggie sauté came out great! I knew going in that the only way I wasn’t going to like it was if I botched something horribly during the cooking, but thankfully everything came out fine and dandy. If you have been struggling with getting the family to eat more vegetables, this is a safe dish that I think most people will enjoy.
